Ingredients:

  • Sushi rice:

    • 1 teaspoon salt

    • Sushi-grade tuna or salmon, thinly sliced
    • Cooked shrimp or crab sticks
    • Avocado, sliced
    • Cucumber, julienned
    • Pickled radish (optional)
    • Lettuce or shiso leaves
  • Other:
    • Nori sheets, cut in half
    • Soy sauce
    • Wasabi (optional)
    • Pickled ginger (for serving)

Instructions:

1.   Prepare the Sushi Rice:

o   Rinse the rice thoroughly until the water runs clear, then cook according to package instructions or in a rice cooker.

o   While the rice is cooking, mix the rice vinegar, sugar, and salt in a small bowl until dissolved.

o   When the rice is done, transfer it to a large bowl and gently fold in the vinegar mixture while the rice is still hot. Let it cool to room temperature.

2.   Prepare the Fillings:

o   Slice the fish, vegetables, and other fillings into thin, long strips for easy rolling.

o   Cut each nori sheet in half to create rectangular pieces.

3.   Assemble the Temaki:

o   Place a half sheet of nori in your hand or on a flat surface, shiny side down.

o   Add a small scoop of sushi rice (about 2 tablespoons) on one corner of the nori and gently spread it without smashing the grains.

o   Lay a few pieces of your selected fillings diagonally across the rice.

o   To roll, start from the rice-filled corner and roll diagonally into a cone shape. Use a few grains of rice to "seal" the end of the nori if needed.

4.   Serve and Eat Immediately:

o   Serve with soy sauce, wasabi, and pickled ginger on the side.

o   Temaki should be eaten right after rolling to ensure the nori stays crisp.
